    Boiled from the sap of Sugar Maple Trees, our Organic Maple Sugar comes from local Vermont producers. It is pure, simple, and delicious!

  • Organic Butter

    Our Butter is produced by Organic Valley from regional farms. It creates cookies that are buttery soft and melt in your mouth as well as ensures the cookies are as pure as possible.

  • Freshly Ground Organic Sprouted Spelt Flour

    Once Spelt berries have been sprouted and gently dried, they are stone ground to order for baking.

  • Organic Spices

    The generous use of organic spices in the cookies give them rich fragrance and a warm flavor. You can be assured the spices are fresh and not irradiated.

The Details of our Cookie Ingredient Choices

While our ultimate goal is to create amazingly delicious cookies, there are some hidden details that can enhance their ability to taste great and be optimally nourishing. These details include paying attention to how a raw product is grown agriculturally to how it is then processed and combined with other products to create cookies.

Sprouted Ingredients: Sprouted Spelt Berries and Almonds, have been found to be much easier to digest that those same ingredients before sprouting, providing more available nutrients and better flavor. The Almonds and Spelt flour are ground fresh for each cookie batch, the Spelt on a French stone mill.

Sweetener: Maple Sugar, has all of the maple sap’s original minerals in tact as well as contains beneficial antioxidants and enzymes. These give Maple Sugar a rich full-bodied flavor that is then contributed to the cookies. Maple Sugar has the added benefit of containing no processing chemicals, leaving it pure and tasty.

Butter: Organic Valley Butter is our choice as it comes from cows whose lives have been very carefully managed. Chemicals absorbed by dairy animals through feed and/or environment are generally concentrated in their milk and milk fat, so choosing organic dairy is a way to minimize the addition of unwanted chemicals in our diets. This butter adds a nice sweetness and freshness to the cookies.

Spices: The spices used in our cookies are fresh and organic. While they are from far off places, they have not been irradiated, maintaining their strong colors and flavors. They are used in abundance and bring a wonderful rich flavor profile to the cookies.

Eggs: Locally produced Organic Eggs are included in the cookie mix. They are from chickens that are fed organic grains and are pasture raised in the next town. Their yolks are bright yellow and firm.
